Swedish Fishermanโs Beef or โSjรถmansbiffโ is a traditional stew. Beef and onion slices are browned and then layered with potatoes. The ingredients are cooked in beer until tender. This is one of my favorite examples of a deceptively simple dish. It can be made ahead, reheats well, and the beer adds a great depth of flavor all in one bottle. Now a cold weather staple, the origin of the dish comes from its popularity with seafarers. The few ingredients made in one pot, made it easy to prepare on a boat. The beer was supposedly first used when fresh water was not available.

Ingredients
8 Large Potatoes
2 Onions
800 Grams Stewing Steak or topside of Beef, thinly sliced
2 Bay Leaves
200 ml. Beef Broth
200 ml. Beer
1 small bunch Parsley
4 tbsp. Butter
Salt, to taste
Pepper, to taste
Pickled Beetroots, for serving
Pickled Cucumber, for serving
1. Preheat the oven to 200ยฐC or 390ยฐF.
2. Peel the potatoes and slice them thinly, about 3-5 millimeter slices.
3. Slice the onion thinly.
4. Heat up 1 tbsp. butter in a frying pan on medium heat and sweat the onions until soft and translucent. Season with salt and pepper, then remove the onion and set aside.
5. Increase to high heat in the frying pan and quickly brown the thinly sliced piece of beef in the remaining butter. Best is to brown the beef in batches, so the temperature of the frying pan doesn't drop too much.
6. Add the potatoes, onion and meat in several layers in a baking tray with a lid. Add the bay leaves and pour the broth and beer over the meat and vegetables.
7. Bake in the oven with a lid on top for about 45 minutes, until the potatoes are soft.
8. Chop the parsley and sprinkle on top of the dish.
9. Serve with pickled beetroots and cucumber.
