    Here is a Mexican Recipe for you to try. 😍

    🇲🇽 Conchas

    Concha is a sweet bread that is often eaten for breakfast or as a snack pastry, and it is found all over Mexico. It has a fluffy brioche-like dough with a crispy streusel topping, scored to resemble a shell. The pastry can come in a variety of colors and other shapes. Concha toppings are similar to macaroons, to create a crispy crust. You can also add a little food coloring to color the plain streusel for different occasions.

    Ingredients

    Dough:

    70 Grams Sugar
    7 Grams Active Dry Yeast
    1 tsp. Salt
    1 tsp. Ground Cinnamon
    630-690 Grams all-purpose Flour
    240 ml Milk
    120 Grams unsalted Butter, cubed
    2 Large Eggs, at room temperature
    Streusel:

    120 Grams unsalted Butter, cubed and softened
    125 Grams all-purpose Flour
    135 Grams Sugar
    1 tsp. Vanilla Extract
    30 Grams Semisweet Chocolate, ground
    1 Large Egg
    2 tbsp. Milk


    1. In a large bowl, mix sugar, yeast, salt, cinnamon and 250 grams or the flour for the dough.

    2. In a small saucepan, heat milk and butter for the dough to 120°-130°C or 250°-260°F. Take it off the heat and add the liquid to the dry ingredients.

    3. Beat the dough on medium speed for 2 minutes. Then add the eggs and beat on high 2 minutes. Stir in enough remaining flour to form a stiff dough. The dough will be sticky.

    4. Turn the dough onto a floured surface. Knead it until smooth and elastic, for about 6-8 minutes. Then place it in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, for about 1 hour.

    5. Meanwhile, make the streusel. In a large bowl, beat butter, flour, sugar and vanilla until combined. Divide it in half and mix the chocolate into one half. Then set the streusels aside.

    6. Punch down the dough. Divide it into 12 portions, form each one into a 7.5 cm oval. Place them 5 cm apart on parchment-lined baking sheets.

    7. In a small bowl, whisk egg with milk and brush it over the dough ovals.

    8. Divide the plain streusel into 6 portions and roll each portion into a 7.5 cm circle. Place over half the rolls. Repeat with chocolate streusel on the remaining rolls.

    9. Using a sharp knife, cut through the streusel on top of the rolls to resemble a clam shell.

    10. Cover with kitchen towels and let rise again in a warm place until almost doubled, about 30 minutes. Preheat the oven to 190°C or 375°F.

    11. Brush the rolls with remaining egg wash. Bake until the tops are lightly browned, for about 15-20 minutes. Remove and place on a wire rack to cool completely.
