  • Hello Everyone,

Here Is A Mexican Recipe for you to try. ๐Ÿ˜

    ๐Ÿ‡ฒ๐Ÿ‡ฝ Pollo Asado

This is a fantastic and authentic version of the juicy and flavorful chicken that hails from Mexico and Cuba. This easy Pollo Asado recipe is marinated in a mixture of lime and orange juice, Mexican herbs and spices and achiote powder to achieve itโ€™s signature red-orange color.

    Ready in: 2h 30 minutes
    Servings: 6

    Ingredients

    Juice from 1 Large Orange
    2 tbsp. Olive Oil
1 tbsp. Lime Juice (about ยฝ Lime)
    1 tbsp. White Wine Vinegar
    1 tbsp. Achiote Powder
    1 tbsp. Ground Coriander
    1 tbsp. Coarse Salt
1 tbsp. Minced Garlic (about 3 Cloves)
    2 tsp. Smoked Paprika
    2 tsp. Dried Oregano
    1 tsp. Ground Black Pepper
    1 tsp. Ground Cumin
    A pinch of Ground Cloves
1-1ยฝ kilos of Chicken Thighs or Legs, trimmed of excess skin and fat.
You can use chicken with or without skin and bones.

    1. Make the marinade: Add all ingredients except chicken in a small bowl. Whisk to combine.

    2. Place the chicken in a large ziploc bag and add the marinade. Close the bag, massage together to coat all the chicken and refrigerate for 2 to 6 hours. Do not marinate longer than 8 hours or the chicken will get tough and begin to break down.

    3. Remove the chicken from marinade and shake off any excess liquid. Place the chicken on a baking sheet lined with parchment paper or foil and bake in the oven on 400ยฐF or 200ยฐC for 30-40 minutes depending on the thickness of the chicken. The internal temperature should read at least 165ยฐF or 73ยฐC.

    4. Serve pollo asado with warm corn tortillas or flour tortillas, Mexican street corn (elotes) and Mexican rice.

    Have fun creating this recipe,๐Ÿ˜
    All the best,
    LuckyEthel (Caroline) ๐Ÿ‡ฌ๐Ÿ‡ง
