    Here is a Italian Recipe for you to try. 😍

    🇮🇹 Mushroom Risotto:

    Risotto is a northern Italian rice dish cooked with broth until it reaches a creamy consistency. This is cooked the slow and painful way, but it is definitely worth doing. This risotto complements grilled meats and chicken dishes very well.

    Ready in: 50 Minutes:

    Servings: 6:

    Ingredients:

    1½ Liter Chicken Broth, divided
    3 Tablespoons Olive Oil, divided
    800 Grams Mushrooms, White Mushroom or Portobello
    2 Shallots, finely diced
    300 Grams Arborio Rice
    125 ml Dry White Wine
    Salt to taste
    Freshly Ground Black Pepper to taste
    3 tbsp. Finely chopped Chives
    4 tbsp. Butter
    50 Grams freshly Grated Parmesan Cheese

    1. In a saucepan, warm the broth over low heat.

    2. Warm 2 tablespoons olive oil in a large saucepan over medium-high heat. Stir in the mushrooms, and cook until soft, about 5-7 minutes. Remove the mushrooms and their liquid, and set aside.

    3. Add 1 tablespoon olive oil to skillet, and stir in the shallots. Cook 1 minute.

    4. Add rice, stirring to coat with oil, about 2 minutes. When the rice has taken on a pale, golden color, pour in wine, stirring constantly until the wine is fully absorbed.

    5. Add 1 deciliter broth to the rice, and stir until the broth is absorbed. Continue adding broth 1 deciliter at a time, stirring continuously, until the liquid is absorbed and the rice is al dente, about 15 to 20 minutes.

    6. Remove the risotto from the heat. Stir in the mushrooms with their liquid, as well as the butter, chives, and parmesan. Season with salt and pepper to taste.

    7. Put the lid on and let the risotto rest for 5-10 minutes before serving.
