    🇫🇷 Quiche Lorraine:

    Quiche Lorraine is a combination of a delicious flaky pie crust that is filled with savory egg custard. Smoked ham or bacon and cheese are the basic fillings, but you can add whatever you want. Broccoli, cooked chicken, sundried tomatoes, blue cheese, salami or caramelized onions can take this quiche recipe from ordinary to extraordinary.

    Ready in: 2h 45 minutes:

    Servings: 6

    Ingredients:

    Pie crust (you could also use a store bought crust):

    125 Grams Butter
    3 Deciliters Flour
    3 tbsp. Cold Water
    1 Egg White

    Filling:

    5 Eggs
    2½ Deciliters Milk
    2½ Deciliters Cream
    150 Grams Cooked Bacon or Smoked Ham
    150 Grams shredded Cheese (preferrably Gruyere)
    ½ tsp. Salt
    ¼ tsp. Black Pepper
    ¼ tsp. Smoked Paprika

    1. Cut the butter in small pieces. With your hands or in a food processor, combine the flour and butter until there are no large chunks of butter.

    2. Add the cold water to the dough and quickly combine it. Don't kneed the dough. Cover with plastic wrap and refrigerate for 1 hour.

    3. Dust your work surface with flour and roll a single crust into a 30 cm circle. Then lift and wrap your pie dough around your rolling pin. If it sticks to the work surface use a food scraper or spatula to loosen it as you go. Place it in a 23 cm pie dish and gently press the dough down to line the pie dish.

    3. Put the pie dish back in the fridge until completely cold again.

    4. Preheat oven to 375˚F or 190˚C and bake for 15 minutes.

    5. Line the center with parchment paper and fill about 2/3 full with pie weights (such as dry raw beans, peas or rice). Bake for 20 minutes.

    6. Remove the pie weights, prick the bottom of the crust all over with a fork and place the crust back in the oven without weights for 10 minutes or until golden.

    7. Brush the inside of the baked tart with a whisked egg white. This will prevent the crust from becoming soggy from the filling.

    8. Lower the oven temperature to 175˚C or 350˚F.

    9. In a large bowl, whisk the eggs, cream and milk together. Then add salt, pepper and paprika and whisk together for about a minute to incorporate a little bit of air into the custard.

    10. Stir in the cheese and the cooked bacon or smoked ham, then pour the filling into the pre-baked crust.

    11. Bake the Quiche Lorraine for about 50 minutes, or until a knife inserted into the middle comes out clean and the center jiggles slightly. The quiche will continue cooking after it is removed from the oven. Let it cool for 15-20 minutes before serving with a salad.
