Sailor-style cod ππ
Ingredients:
4 cod fillets
2 medium onions
1 red pepper
500 gr. large size shrimp
200 g of small shrimp
500 gr. of shelled clams
Homemade seafood broth
White wine q. B.
1 tablespoon cornstarch flour
Olive oil q.s.
Garlic q.s.
Salt q.s.
1 teaspoon of paprika
1 stem of parsley
1 sprig of coriander
Preparation of Homemade Seafood Broth:
Cook in a little salted water to taste. the small shrimps. Remove the skin, reserve the core.
Return the peels to the cooking pan. Blend with a hand blender and heat until slightly boiled.
Pass through a sieve and set aside.
Cod Preparation:
In a pan I put the chopped garlic cloves, the sliced onion, the sliced pepper and the parsley. I drizzled some olive oil and heated until the onion became translucent. I added the white wine and paprika.
I placed the cod fillets and covered them with the reserved seafood broth. I adjusted the salt and pepper. I let it boil for 8 minutes and added the clams and raw shelled shrimp, boiled for two minutes, added the reserved shrimp brains and removed from the heat.
I placed the cod fillets, clams, shrimp and pepper, and onion in an ovenproof dish.
In the broth I dissolved the cornstarch and let it thicken. I basted the cod fillets with the sauce obtained. I put it in the preheated oven at 180ΒΊ for about 10 minutes. I removed it from the oven, sprinkled it with chopped coriander and served immediately.
