Almond and Carrot Cake ππ
Ingredients:
5 eggs + 2 yolks
200 g of sugar
200 g of grated carrot
240 g of ground almond kernels
60 g of sliced almond kernels
50 g of flour
50 g of breadcrumbs
1 teaspoon of baking powder
1 teaspoon of cinnamon
Margarine and flour for the pan
Preparation:
Turn on the oven at 190ΒΊC. Spread the tray with margarine and sprinkle it with flour. Separate the yolks from the whites, add the yolks to 150g of sugar and beat until the mixture is fluffy and light. Then add the carrot, ground almonds, flour, breadcrumbs, yeast and cinnamon and mix well. Then beat the egg whites with the rest of the sugar, add them to the previous mixture and stir. Pour the mixture onto the tray, sprinkle with sliced almonds and bake for around 50 minutes. Remove, let cool a little and unmold. Serve cold sprinkled with powdered sugar.
