๐ฎ๐น Panettone:
Chocolate and Orange Panettone
Soft, light, chewy, fruity and wonderfully aromatic, Panettone is Italyโs world famous sweet bread that is traditionally enjoyed for Christmas and New Year. To make panettone you will need a traditional paper panettone mold. They are constructed of thick, sturdy paper with a smooth coating inside and are not meant to be reused.

Ingredients:
1ยฝ Packets of Yeast (7 Grams each)
375 ml. Water heated to 45ยฐC or 115ยฐF
375 ml. Whole Milk heated to 45ยฐC or 115ยฐF
300 Grams Sugar + 1 tbsp.
1 Egg + 1 Egg White
Pinch of Salt
1 tsp. of Vanilla Extract
Zest of 1 Orange
115 Grams Melted Butter
960 Grams All-Purpose Flour
175 Grams Chocolate Chips
140 Grams Raisins, chopped
1. Preheat the oven to 175ยฐC or 350ยฐF.
2. Sprinkle the yeast into a bowl with the warm water and milk and whisk in 1 tablespoon of the sugar. Let sit for 5 to 7 minutes or until it becomes very foamy.
3. Next, whisk in the rest of the sugar, 1 egg, salt, vanilla, orange zest and melted butter until combined and transfer it to a standing mixer with the hook attachment.
4. Slowly pour in the flour and mix on low speed until combined and kneed for 5 to 10 minutes.
5. Let sit for 1 hour or until it doubles in size.
6. Add the chocolate chips and raisins and fold them in the dough until they are completely folded in. Put the dough into a prepared cake pan with a panettone mold and let rise for more 30 minutes.
7. Brush the top of the bread with the egg white and sprinkle on the 1 tablespoon of sugar and bake for 60 to 70 minutes or until browned on top and the inside is cooked.
8. Cool completely on a rack before slicing and serving.
