    🇺🇸 🇬🇧 Apple Pie:

    Apple pie is a classic sweet dessert, best made with tart apples.


    Ready in: 2h:

    Servings: 6

    Ingredients:

    Pastry (you could use store bought pastry instead):

    350 Gram Plain Flour
    20 Gram Caster Sugar
    ¼ tsp. Salt
    200 Gram Cold Butter, diced
    1 Large Egg, lightly beaten with 2 tbsp. Cold Water

    Filling:

    2 tbsp. Freshly Squeezed Lemon Juice
    1½ Kilos Apples
    150 Grams Caster Sugar, plus more for sprinkling on the pie
    50 Grams Unsalted Butter
    2 tsp. Ground Cinnamon
    Generous pinch of Ground Nutmeg
    1 Large Egg, lightly beaten

    1. Whisk together the flour, sugar and salt for the pastry. Using your fingers, work the butter into the dry ingredients until you have small pea-sized crumbs.

    2. Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tbsp more of cold water over the mixture

    3. Form the dough into a disk, wrap in clingfilm and refrigerate until thoroughly chilled, at least 1 hr.

    4. For the filling, put the lemon juice in a medium bowl. Peel, halve, and core the apples. Cut each half into 4 wedges. Toss the apple with the lemon juice. Add the sugar and toss to combine evenly.

    5. In a large skillet, melt the butter over a medium-high heat. Add the apples and cook while stirring until the sugar dissolves and the mixture begins to simmer, about 2 mins.

    6. Cover and reduce the heat to medium-low. Cook until the apples soften and release most of their juices, about 7 minutes.

    7. Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to get as much liquid as possible. Return the juices to the skillet, and simmer over a medium heat until thickened and lightly caramelized, about 10 minutes.

    8. In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely.

    9. Cut the dough in half. On a lightly floured surface, roll each half of dough into a disc about 28 to 30cm wide. Layer the dough between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 mins.

    10. Line the bottom of a 23 cm pie pan with one of the discs of dough, and trim it so it lays about 1 cm beyond the edge of the pan. Put the apple filling in the pan and mound it slightly in the centre. Brush the top edges of the dough with the egg.

    11. You can either place the second disc of dough over the top as it is, and press the edges together to form a seal, or you can make a lattice or another pattern on top. Brush the surface of the dough with egg and then sprinkle with sugar. If you cover it completely, pierce the top of the dough in several places to allow steam to escape while baking.

    12. Refrigerate for at least 15 minutes, and then bake the pie in the lower part of the oven at 190°C or 375°F until the crust is golden, about 50 minutes. Cool on a rack before serving and serve with vanilla ice cream.
