    ๐Ÿ‡ช๐Ÿ‡ธ Arroz de Coliflor:

    Riced cauliflower is an excellent recipe that you can integrate into your basic home cooking reportoire. This recipe is straightforward and flavorful. The riced cauliflower acts as a foil for more pronounced main flavors. You can combine it with any other vegetables or with meat or fish. Like white rice, itโ€™s great for mopping up gravies and sauces.

    Ready in: 20 minutes:

    Servings: 4:

    Ingredients:

    1 Head Cauliflower
    2ยฝ Deciliter Chicken Broth
    2 Tomatoes, chopped
    1 Small Onion, chopped
    ยฝ Red Bell Pepper, chopped
    2 Garlic Cloves, minced
    1 tsp. Ground Cumin
    1 tbsp. Olive Oil
    1 tbsp. Tomato Paste
    Salt and Black Pepper to taste

    1. Cut the cauliflower into florets, then place half of the cauliflower in a food processor and pulse until the cauliflower has the texture of rice, donโ€™t over process. Set aside and repeat with the remaining cauliflower.

    2. In a medium sauce pan, heat the oil over medium-high heat. Add the onions, garlic and bell pepper. Cook until the onions are translucent, about 4 to 5 minutes.

    3. Add the cauliflower rice, chopped tomato, cumin and the tomato paste. Stir until the cauliflower rice is well coated. Add the chicken stock and stir well until everything is combined. Now you can also add any additional ingredients you want to add, such as shredded chicken, peas, carrots, green beans and red pepper flakes. Cook for about 5 to 7 minutes more and then season with salt and fresh ground black pepper.
